Sunshine Tea Recipe:  A lovely, calming blend of equal parts Dried Lemon Balm Dried Calendula and Milky Oats ~tops of the Oat plant after it has flowered. Mix the herbs together, then steep in just-boiled water for 10 minutes. Strain and serve. Enjoy! Note:  These are easy to grow plants by seed. Homegrown = truly organic. When crating your tea, experiment with equal proportions to taste. Often less is more.

One of the best things about Summer is fresh peaches! If you are a fan of the fruit, try this Summer Salsa Recipe that pairs perfectly with tortilla chips and fish tacos. Gently incorporate all the ingredients in a bowl and season with sea salt and pepper. Note: For best results use just picked peaches at ripe and juicy peak perfection.

Ingredients:

2 cups fresh peaches, peeled and diced
1 cup red bell pepper, diced small
3 Tbsp red onion, diced small
3 Tbsp fresh lime juice
1 teaspoon lime zest
2 Tbsp fresh cilantro, chopped
1 jalapeño chili, minced
1 tsp fresh ginger, minced
