This easy 7-ingredient Carrot Ginger Soup is great for warming up on cold nights. It will soothe the soul and settle the spirit. Plus with its luscious creamy texture from blended carrots sans no cream, it’s completely vegan. Soul Food.

Ingredients

  • 1 Tbsp. extra-virgin olive oil
  • 1 cup chopped yellow onions
  • 3 garlic clovessmashed
  • 2 heaping cups chopped carrots
  •  tsp. grated fresh ginger
  • 1 Tbsp. apple cider vinegar
  • 3 to 4 cups vegetable broth
  • sea salt and fresh black pepper
  • 1 tsp. maple syrupor to taste (optional)
  • seeds of choice for garnishoptional
  • dollops of pestooptional

Instructions

  • Heat the olive oil in a large pot over medium heat. Add the onions and a generous pinch of salt and pepper and cook until softened, stirring occasionally, about 8 minutes. Add the smashed garlic cloves (they’ll get blended later) and chopped carrots to the pot and cook about 8 minutes more, stirring occasionally.
  • Stir in the ginger, then add the apple cider vinegar, and then add 3 to 4 cups of broth, depending on your desired consistency. Reduce to a simmer and cook until the carrots are soft, about 30 minutes.
  • Let cool slightly and transfer to a blender. Blend until smooth. Taste and adjust seasonings. Garnish with seeds of choice.
  • Serve with a dollop of pesto, if desired. Bon Appétit!

Fire cider has been used and shared by herbalists for generations as a remedy to ward off illness and promote health. Traditional Fire Cider Recipe ~Excerpted From Fire Cider! 101 Zesty Recipes For Health-Boosting Remedies Made With Apple Cider Vinegar By Rosemary Gladstar, 2019.

Ingredients

  • ½ cup grated fresh horseradish root
  • ½ cup or more chopped onions
  • ¼ cup or more chopped garlic
  • ¼ cup or more grated ginger
  • Cayenne pepper, fresh (chop it up) or dried (flaked or ground), to taste
  • Apple cider vinegar (preferably raw and organic)
  • Honey

Directions

  1.  Place the herbs in a half-gallon mason jar and add enough vinegar to cover them by 3 to 4 inches. Seal the jar with a tight-fitting lid. Place the jar in a warm spot and let sit for 3 to 4 weeks. Shake the jar every day to help in the maceration process.
  2.  After 3 to 4 weeks, strain out the herbs, reserving the liquid. Warm the honey (so that it will mix in well) and add it to the vinegar, to taste. “To taste” means your fire cider should be hot, spicy, and sweet. The honey also helps cool the heat, moistens, and balances all the fiery ingredients.
  3.  Bottle, label, and enjoy! Fire cider will keep for several months unrefrigerated if stored in a cool pantry. Best to keep refrigerated.
  4.  A small shot glass daily serves as an excellent tonic. Or take fire cider by teaspoons throughout the day to help your immune system do battle.

Late dropping acorns (October and November) are typically healthiest. A healthy acorn specimen suitable for growing an Oak tree is one that is plump with a cap that is loose and/or easily removed. A naturally split or cracked acorn is fine, but do not collect damaged or crushed acorns.

How To Grow Oak Trees From Acorns:

  1. After inspecting the collected acorns, place them in a mixture of 1/2 peat and 1/2 loose barley in a clear zip-lock plastic food storage bag. Do not crowd the acorns. They should be loose in the mixture and the bag should not be more than half-full.
  2. Seal the bag and store it in the refrigerator throughout the Winter. Periodically check the moisture level -it should be damp, but not wet. At some point during the winter, the acorns should split open and white sprouts should begin to appear and grow.

When To Plant Acorns:

  1. In early Spring (late March to early April), fill individual plant pots with clean potting soil. Place the sprouted acorns horizontally in the soil about 1 1/2 inches deep and water. Place the pots in a south-facing window or under an artificial light source and keep the soil moist.
  2. During the next few weeks, the acorns will sprout into a sapling, with a few tiny, yet visible Oak leaves. As the trees grow, transplant them into larger containers. Do not allow the trees to become root bound, or dried out.
  3. You may keep your trees in plant pots indefinitely, or until they have reached a desired size to plant outside. Before planting them in the ground, introduce the trees slowly to the outdoors by placing them in cooler areas such as on a porch, or in a shed or garage for a few days at a time. Transplant them outside in the early Fall before danger of frost.

Ingredients

  • 1 cup of organic pumpkin puree
  • 1/4 cup organic almond milk
  • 1/2 cup raw honey
  • 2 Tbsp maple syrup
  • 2 tsp cinnamon
  • 1 tsp ground ginger
  • 1 tsp nutmeg
  • 1/4 tsp allspice
  • 1/4 tsp coriander
  • pinch of sea salt

Directions

  1. Put all the ingredients into a saucepan and mix thoroughly.
  2. Simmer the mixture on a low heat until it thickens ensuring to stir it constantly to prevent it from sticking to the bottom of the pan. It should take approx 20-30 minutes to thicken.
  3. Meanwhile, sterilize a canning jar by washing it in very hot soapy water, rinse thoroughly and dry in a low oven for about 15 minutes. In the last 5 minutes put the lid in the oven.
  4. When the butter has sufficiently thickened transfer to the jar & screw the lid on immediately.
  5. Decorate with burlap twine and label and tag for gifting.
